Madras Curry ( Madras Meat Curry )

Madras Curry or Madras Meat curry is actually a western version of the South Indian Meat curry and is more popular in the UK. The Madras Curry Sauce is simply a very hot curry. You will not find a curry named Madras Meat curry anywhere in Madras ( Now known as Chennai ). The western curry is based on a spice blend comprised mainly of chilli, cumin, coriander and turmeric. What makes the curry hotter, is the type of chillies used. South and Central Indian Chilli powders are frequently made from longer (dried) chillies which are similar to cayenne peppers. Here is an authentic Madras Meat curry recipe. It may be made with Mutton, Lamb or Beef.  It is a delicious, spicy curry with a good amount of smooth gravy, so it may be served with rice or flatbreads.

There are many variations to the Madras curry. Some like to use yoghurt to balance the heat of the chillies, some use coconut, Some just add water. My recipe calls for coconut.

 

Recipe at a glance:

  1. Extract coconut milk and keep some grated coconut for the paste.
  2. Grind together the spices and coconut.
  3. Saute the spice mix with oil and onion patiently.
  4. Add the meat and fry briefly. Add tomatoes.
  5. Add water and cook till tender.
  6. Laslty add the coconut milk and simmer before serving.

Key Ingredients: Meat, Onion, Ginger, Garlic, Tomato, Coconut, Spices, Oil, Salt.
